Warm-cold Winter Salad with Mushrooms and Kohlrabi


1 kohlrabi

1 small broccoli head

300 grams of mushrooms

Half onion

Few lettuce leaves

Handful of walnuts

Olive oil, balsamic vinegar

Salt and pepper




Clean the mushrooms from the dirt and cut them into slices. Remove broccoli flowers from their stalks. Warm up olive oil and add the mushrooms. Season them with salt and pepper immediately. Once mushrooms release liquid add the broccoli. Stir all together until the liquid evaporates and set it aside. Cut onions into thin slices and peel kohlrabi. Cut them into strips. Wash salad and break it into pieces. Before serving, mix all ingredients and season them with olive oil dressing, balsamic vinegar and a little bit of salt. Sprinkle with nuts that you've previously chopped into pieces with the knife.

This salad is a great side dish with pasta, risotto or just a piece of tofu.
