Wilted Kale and Roasted-Potato Salad

INGREDIENTS:

2 large potatoes (cut into cubes)

olive oil

salt and pepper

rosemary

1 clove of garlic

1 small onion (cut into crescents )

1 teaspoon of brown sugar

2 tablespoons of vinegar

1 small cabbage head (cut into strips)

For Topping: 1 tablespoon of mustard , 1 of tablespoon olive oil, salt, pepper

 

PREPARATION:

Warm up the oven to 200°C. Toss potatoes with oil, salt, pepper and add rosemary and garlic. Bake until golden brown. Meanwhile, heat olive oil and add chopped onions in a saucepan. When onions soften, add sugar and vinegar. After liquid evaporates, pour water and keep on low heat for about 15 minutes, until onions are completely caramelized. Heat up 2 tablespoons of oil in another pan and fry kale until it is soft. If necessary, pour more water. Mix the ingredients for the dressing. Complete salad: mix potatoes , caramelized onions, cabbage and add dressing.
