Pesto

INGREDIENTS:

2 big handfuls basil or parsley

2 cups walnuts

1 medium tomato, finely chopped

½ finely chopped red bell pepper

3 cloves garlic

Pinch of salt

 

 

 

 

INSTRUCTIONS:

Combine all ingredients in a food processor or blender. (If your blender is not strong enough, first grind the dry ingredients in a nut grinder and transfer to a bowl. Blend the veggies, add to the dry ingredients and stir until well combined.)

*Basil or parsley, juicy tomatoes and peppers make a smooth spread with no need for added oil. This delicious pesto goes well with crackers and can be used as a pizza sauce.
