Chickpeas and Chestnuts Cream Soup













500 g of chestnuts, 100 g of chickpeas (canned), 1 onion, 2-3 garlic cloves, fresh parsley and thyme, 300 g of mixed mushrooms, olive oil, salt, pepper, a little bit of soy / oat cooking cream


Boil the chestnuts for about half an hour or bake them if you prefer more intense flavor. Fry the onions and garlic on a little olive oil and add the mushrooms until they get soft. Once softened, add the chickpeas and all the spices. Allow a few minutes for the flavors to merge. In a blender put chestnuts and other pre-prepared ingredients. Put a little bit of cream, a little bit of olive oil and mix until you get a creamy soup. At the end boil it for a little while and serve with pieces of fresh herbs.
