The Divine Bolognese

INGREDIENTS (for two people):

1 small onion

1 carrot

200 g of soy flakes

1 garlic clove

Salt, pepper, seasoning, oregano (optional)

Tomato paste (homemade or purchased)

 

 

 

 

 

PREPARATION:

Put the soy flakes in salted water, after they start to boil cover the pan and leave them inside for about 5-10 minutes. On heated olive oil place the onion and fry it until it gets golden yellow color. Then add chopped garlic clove and once the garlic releases its flavor, add carrots previously chopped into cubes. Cook it for another minute or two while stirring constantly, then add 30 ml of water. When the water boils, cook it for an additional 5-7 minutes, then add the soy flakes and spices and more water if necessary. After 10-15 minutes add the tomatoes, stir, and leave it to cook another 3-5 minutes to get a taste of dread, cover and that's it.

Bolognese is best served with pasta but it can also be rice or couscous.
