Cauliflower for Those Who Really Hate It


Cauliflower head

Cook or steam the cauliflower until it gets soft on the way that spoon passes through it, rather than knife (I can already hear all those who are saying ugh). Strain it and leave it to dry. Once dried, pour over a few tablespoons of olive oil and lemon juice (if the cauliflower head is very big, it will take more than 1 lemon). It should be really sour. Season it with salt and pepper. Mash everything using mashing spoon or fork.
Now, this is the most important step: put the mixture in the refrigerator at least two hours in order to cool down completely. Or, if you're in hurry, put it in the freezer for about half an hour, but don't forget to stir occasionally so the edges don't freeze.
Once the cauliflower is completely cold, it's ready to eat. You can sprinkle a little bit of red pepper before serving to make it look nicer. I suggest that you use as a side dish with fried seitan, tofu, tempeh or soy. It goes great with a sandwich, or just with a slice of bread, even as a spread.
