Vegetable Risotto with Arugula Pesto













For vegetables risotto: 400 g of rice (Arborio or Carnaroli), 2 small zucchini, 2 carrots, onion, 2-3 garlic cloves, 1 dl of white wine, about half a liter of vegetable stock, olive oil
For arugula pesto: 2 full hands of arugula (washed and dried), 10-12 almonds, 1/2 tablespoon of nutritional yeast, 1 garlic clove, 1/2 teaspoon of salt, 2-3 tablespoons of olive oil


For start, it would be good to have a really big and wide pot with thick bottom. Chop finely onions and garlic and fry them on olive oil. Chop zucchini into small cubes and carrots into thin strips. Add zucchini and continue to fry until zucchini begin to soften. Let all the liquid to evaporate and then add the rice.
Rice will begin to stick to the bottom of the pot. Do not give up! Stir until rice begins to make cracking sound. Add white wine, stir and at first lightly season with salt and pepper. Towards the end add salt little by little and taste the rice.
Continue to stir and when rice runs out of liquid add few tablespoons of broth. It would be good that the foundation is kept warm all the time so rice cooking wouldn't get interrupted.
When the rice gets, according to the instructions on the packaging, to the lower limit of cooking time (if the package says 14-16 minutes) cook up to 14. Then add more broth to obtain a slurry mass, don't worry, the rice will drink all extra liquid.
Remove the pot from the heat, add carrot and a little bit of olive oil. Stir strongly, cover it and leave it on the side for five minutes.
Meanwhile, prepare the pesto: Put all the ingredients in the blender and blend shortly. Do not overdo it not to get the paste - it is better to feel little pieces of almonds.
Before serving vegetable risotto, stir one more time. Serve with a spoon of pesto on top. If there is pesto left, it can last a week in the refrigerator in a sealed clean jar. After that period certainly throw it away.
