The Simplest Chickpea and Spinach Stew

INGREDIENTS:

1 bundle of spinach (about 150-200 grams)

1 can of chickpeas (or dip, but cook your own chickpeas)

3-4 medium potatoes

3 dl of vegetable stock (or water)

1 onion

Salt, pepper

olive oil

 

 

 

PREPARATION:

Soak spinach in cold water to wash it. During this time, chop the onion, peel the potatoes and cut them into cubes of about 1 centimeter in size.
Pour a little olive oil into a pot and fry the onion until it gets golden. Then add well-dried potatoes and continue to fry, for about 5-10 minutes, until everything starts to stick to the pot. When the potato is practically finished, add the broth. Now you can mash part of the potatoes. When all potatoes are fully cooked, add chickpeas. Boil it, stir in the spinach, season it with salt and remove it from the heat. Cover it for a minute or two until the spinach has wilted.

When serving, you can add some more pepper and pour it with a little bit of olive oil.
