Pasta with Pesto and Avocado













500g of spaghetti, 2 ripe avocados, juice of one lemon, salt, pepper, olive oil
For the pesto: a handful of arugula, a handful of almonds, 2-3 cloves of garlic, salt


First make the pesto. Fry dried almonds in a pan. Grind all other ingredients in a blender and add the almonds toward the end. Walnuts are also OK.
While spaghetti is cooking, clean avocado, insert the other ingredients in the blender along with salt and pepper, and grind until you get the cream. Once spaghetti is nearly done, take a cup of water from the pot. Reheat cooked spaghetti with avocado cream and mix, adding water little by little until you get a good creamy consistency. Serve immediately with pesto on top.
