Pasta with Veggies


500 g rotini, cooked and drained

½ head broccoli, cut into small florets and blanched

1 zucchini, diced and blanched

1 yellow squash, diced and blanched

1 red bell pepper, diced

1 onion, chopped

1 tablespoon finely ground mustard seed

2 tablespoons lemon juice

4 tablespoons sunflower oil



Combine the rotini and vegetables in a big bowl. Pulse the onion, mustard seed, lemon juice, oil and pepper in a blender. Add the parsley and blend until smooth. Pour over the rotini and mix well.
