INGREDIENTS:
2 zucchinis
1 onion
2 carrots
2 bell peppers
Soy sauce or salt
Olive oil or oil of choice
INSTRUCTIONS:
Chop the onion (not too finely), zucchinis, carrots and peppers. Sauté the vegetables in a little oil in a skillet or wok. Add about 4 tablespoons of soy sauce or salt to taste. Keep stirring and adding more soy sauce or salt if needed. When the vegetables soften, mix with cooked spaghetti or rice.
