Spaghetti Bolognese


1 onion, chopped

1 garlic clove, chopped

1 tablespoon of vegetable oil

115 g of mushrooms, chopped

400 g of canned tomatoes, chopped (or the same amount of tomato puree)

120 g of soy flakes or ground seitan

285 ml of vegetable broth (or water)

Salt and pepper (to taste)




Heat oil and fry onion and garlic for 3-4 minutes. Add mushrooms and continue frying for additional 3-4 minutes, stirring constantly. Add tomatoes, soy flakes or seitan and broth (or water). When it starts boiling, reduce heat and let it simmer uncovered for additional 15-20 minutes. Season with salt and pepper to taste. Serve with spaghetti.
