The Best Vegan Mac & Cheese You Will Ever Have

INGREDIENTS:

2 yellow potatoes

1 carrot

White onion

Pasta (of your choice)

½ cup of raw cashews

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 teaspoon of salt

 

 

PREPARATION:

Peel the potatoes. Chop them into 1-inch pieces and boil them for 2 minutes. Chop the carrot and add to boil; boil for 5 minutes. Peel and chop onion then add into the pot. Boil for 7 more minutes or until if soft. Remove all ingredients but save the boiled water. In a separate pot start cooking the pasta. Blend the cashews, boiled water (about 1 ½ cups), veggies and the seasonings. Once the mixture becomes creamy pour over the pasta and stir in lightly. Add a pinch of paprika and/or drizzle some truffle oil (optional). Decorate with some parsley (optional).
