Green Peas Stew


450 g of green peas

2 large carrots

2 large potatoes

1 small silverskin onion

Turmeric, cayenne pepper, salt, pepper, mint

Olive oil






Finely chop the onion and simmer it on olive oil with turmeric and carrot half-rounds for about 10 minutes. Add a little water and continue to simmer for a while. Add the green peas (I used the frozen variety) and the remaining water. Add the potatoes cut in small cubes, cayenne pepper, salt, pepper, and dried mint. Leave to cook for 30 minutes.

Seeing as potatoes soften during cooking and release the starch which acts as a thickener, there is no need for adding roux. After the stew has cooled, you may add ground flaxseed to taste. Bon appétit! ?
