Sweet Potato Ice Cream


200 grams of organic orange sweet potatoes

2 dcl of vanilla soy milk

2 ripe bananas

20 Pistachios








Wash the sweet potato (leave the peel) and place it in the oven at 180° C for 50 minutes. Feel free to bake more sweet potatoes, although you will need only one for this ice cream. Once baked, cut it into 6-7 pieces and place it in a freezer bag and put in freezer for at least 5 hours.
Peel 2 bananas and cut them into rings and put them in a freezer bag in the freezer for at least 5 hours.
When you are ready for the ice cream, take out sweet potato and banana from the freezer and put them in a blender, along with vanilla soy milk. Blend for about 50 seconds - until you get a creamy ice cream.
Peel 20 pistachios and cut them into small pieces. Separate the ice cream in two bowls and sprinkle them with bits of pistachio.
Share ice cream with your friend or partner and enjoy slowly in it.
