The Easiest, Tastiest and Cheapest Chocolate Cake












INGREDIENTS: dry - 1 ¼ cups flour (you can use plain hard white flour, but it's best to mix half whole-grain and half hard flour), 3/4 cup brown sugar, 1/3 cup cocoa powder, 1 teaspoon baking powder or baking soda, couple pinches of salt, spices to taste: cinnamon, cardamom, anise...; liquid - 1 cup warm soy milk, apple juice or water (it doesn't affect the taste), 1/3 cup oil, 1 tablespoon apple cider or wine vinegar
for the ganache - 200-250 g dark chocolate (dairy-free), 200-250 ml soy or oat cream.

PREPARATION: Combine the dry ingredients well and add all the liquid ingredients except vinegar. Stir with a spoon (don't use a food processor), then add the vinegar, stir to combine and place in the oven immediately. Bake at 180°C for 20-25 minutes. While the cake is baking, slowly melt the chocolate and cream on steam until the mixture is completely even. Do not let boil! remove the cake from the oven and glaze with the ganache while still hot. Cool before serving. A few more ideas: top with chopped toasted hazelnuts before glazing, sprinkle with coconut over the glaze, add orange zest into the dough and drizzle with orange juice before glazing.
