Poppy Seeds and Cranberries Juicy Cake













1 ½ cup of ground poppy seeds, 1 cup of whole wheat integral flour, 1 ½ cup of soy milk, ½ cup of coconut oil, ½ cup of candied cranberries, 1 baking powder, 1 vanilla sugar, 1 cup of water, 1 orange, 1 cup of light brown muscovado sugar, 1 tablespoon of rum


In a bowl mix poppy seeds, flour and baking powder. Then add soy milk, cranberries, vanilla sugar and coconut oil. All the ingredients mix well. You can chop cranberries into smaller pieces or leave them whole. Do not add any sugar in the mixture because of sweet syrup that you will pour over the cake at the end.
Put the mixture in a greased baking pan with margarine (approximately 20x30 cm) and bake 30 minutes at 180°C. At the end of baking, boil water, squeezed orange juice, sugar and rum. If you want the cake to be sweeter you can add more sugar. Stab the cake surface in few places with a fork and pour hot syrup over it. Leave it to cool down.
