Pumpkin Soup

INGREDIENTS:

1 medium pumpkin (1.5 kg)

1 small onion

1 litre of water

oil

salt, pepper

estragon

parsley, chives, basil

 

 

 

PREPARATION:

Dice pumpkin into 2-3 cm squares.
Roughly chop onion.
Heat oil in a large pan. Fry pumpkin and onion until brown.
Cover with boiling water.
Simmer until pumpkin is soft.
Stir until smooth. If too thick, add more boiling water.
Add salt and pepper. Season to taste.
