Tomato and Rice Soup

INGREDIENTS:

½ cup chopped onion, 1 clove garlic

2 tbs butter or organic margarine

12 cups water

2 medium potatoes, cubed

2 tsp salt

2 tsp any strong spices

pepper to taste

1 cup rice

2 cups peeled and chopped tomatoes

2 tsp fresh basil, chopped (or chopped parsley/chives)

PREPARATION:

Sauté onions and garlic in butter/margarine. Add potatoes, water and spices. Bring to a boil and add rice and tomatoes. Simmer for 20-30 minutes. Pour into bowls and sprinkle with parmesan. Decorate with chopped parsley/chives.
