INGREDIENTS:
4 slices of vegan bread
4 slices of eggplant
6 oyster mushrooms
4 slices of tomato
2 large lettuce leaves
Vegan mayonnaise
Oil
Pinch of salt
INSTRUCTIONS:
Sprinkle salt on the eggplants and mushrooms and sauté in a small amount of oil until they soften. Spread the vegan mayonnaise on one side of each bread slice. Place the vegetables on 2 bread slices and cover with the remaining slices.
