INGREDIENTS:
½ cups rice (jasmine or basmati)
3 cups milk (rice, soy, oat...)
¼ cup fruit sugar (fructose)
¼ teaspoons salt
1/3 cup raisins
¼ teaspoon orange extract, orange peel and juice from one orange
2 cups carob powder
PREPARATION:
Put rice in a large pot and cover with water. After it boils, cook for 5 minutes and then drain. Put rice back in the pot and add milk, sugar and salt. Let mixture boil (on medium heat). Add raisins and carob powder and continue cooking (stirring frequently) until rice is softened and mixture is thickened (10 minutes). Remove pudding from heat, chill to room temperature and mix in orange extract, peel and juice. Serve cold or room temperature.
